It is not particularly useful to answer you with specifics on these 
topics.  What you need to do is to start reading about EXAFS from teh 
beginning.  Fortunately, there is an excellent place to start

Here you can find tutorials, examples and software.  I urge you to start 
by reading the tutorials and possibly any books you can find about EXAFS 
and then try out the softeware with the examples.  At that point you may 
have some specific questions which the members of the list will be happy 
to answer.
